I revamped this from an allrecipes.com recipe. Fairly easy and really tasty!

Recipe Ingredients for Stuffed Chicken Breasts

3 lb chicken breast
4 slices wheat bread
1 slice rye bread
1/2 c pecans, chopped
3/4 c chicken broth
2 cans cream of chicken soup
1/2 c seasoned bread crumbs
1 tbsp oil

Recipe Directions for Stuffed Chicken Breasts

  1. slice breasts in half if they are thick

  2. pound to about 1/4 inch thickness

  3. tear bread slices into pieces and place in a bowl

  4. add chopped pecans

  5. add chicken broth and mix together until moistened

  6. put bread crumbs on plate, board, or waxed paper

  7. lay a piece of chicken on the crumbs, place a spoonful of the bread mixture on the chicken

  8. roll chicken up and secure with toothpick

  9. repeat with each piece of chicken

  10. put oil in a large skillet

  11. add chicken and lightly brown on all sides (does not have to be fully cooked)

  12. pour 1 can of soup into a shallow baking dish

  13. place browned chicken rolls (after removing toothpick) into the baking dish

  14. Pour 2nd can of soup over chicken

  15. If there was leftover bread mixture, crmble it over the top of the chicken

  16. Bake at 400 degrees for about 25 minutes.
