Sausage and mushroom stuffed chicken breasts

Recipe Ingredients for Stuffed chicken breasts

4 boneless skinless chicken breasts
2 celery stalks, finely chopped
1 cup fat free reduced sodium chicken broth
4 ounces mild italian sausage
8 ounces mushrooms, chopped
1/2 cup italian breadcrumbs
1/4 cup chopped onion

Recipe Directions for Stuffed chicken breasts

  1. Brown sausage and add celery, onion, and mushrooms. Saute until soft.

  2. Add half of the chicken broth.

  3. Add breadcrumbs and let sit until liquid is absorbed.

  4. Pound chicken breasts thin.

  5. Add stuffing to chicken breasts and secure with a toothpick.

  6. Brown in a pan for a few minutes on each side.

  7. Add chicken broth to pan and cook until chicken is done.
