Recipe Ingredients for Stuffed Chicken Breasts

4 chicken breast, boneless
1 tbsp vegetable oil
3/4 cup onion, chopped
1/2 cup celery, chopped
1 cup brocolli, chopped
1/4 cup green pepper, chopped
2 eggs, beaten
1 tbsp parsley
2 tbsp bread crumbs
1 tbsp parmesan cheese, grated
3/4 cup mozzarella cheese, grated
1 can tomato soup
1/2 cup water
1/2 tsp dried basil

Recipe Directions for Stuffed Chicken Breasts

  1. Place chicken between 2 pieces of plastic wrap or place in ziploc bag and seal. Pound with a meat mallet to flatten evenly.

  2. In skillet heat oil and saute the vegetables until translucent and tender.

  3. Beat egg and combine with vegetables and the parsley, bread and cheeses. Stir to blend.

  4. Sprinkle chicken with salt and pepper. Arrange filling evenly on chicken. Roll up and secure with toothpicks.

  5. Place in oven safe roasting pan. Spoon extra filling in and around the rolled up chicken.

  6. Mix water, soup and basil and pour over chicken.

  7. Bake at 350 for 1 hour
