Skinless, boneless chicken stuffed with vegetables

Recipe Ingredients for Stuffed Chicken Breasts

18 oz chicken breast, boneless, skinless, (3-6 oz filets)

Filling:
1 3/8 oz Broccoli, flowerets only
1 7/8 oz red sweet pepper
1 3/4 oz Bok Choy, cut in 2 inch pieces
5/8 oz Scallions, green onion, cut in 2 inch pieces
1/4 oz garlic cloves, about 3 medium size cloves
3 oz Mozzerella cheese, fat free
1 tsp pepper

Side Dish:
12 oz frozen broccoli

Recipe Directions for Stuffed Chicken Breasts

  1. Filet the chicken breasts and pound flat with a flat edge of a tenderizer hammer. Sprinkle each filet with pepper.

  2. Put the filling items into a chopper/blender and mince together.

  3. Spread the filling on each filet and top with 1 oz of the fat free cheese.

  4. Roll up and secure with toothpicks.

  5. Place each stuffed breast in a large, preheated skillet coated with Pam.

  6. Cook on medium heat, turning over when one side is lightly browned, about 15 minutes each side.

  7. Cook frozen broccoli according to package directions.

  8. Transfer stuffed chicken breasts to serving plates and add a serving of the broccoli, about 4 ozs.
