Lovely presentation, served over polenta, slow-cooker stuffed with spinach, feta, and sun-dried tomatoes. (Great for entertaining!)

Recipe Ingredients for Stuffed Chicken Breasts

3 1/2 lbs chicken, breasts
8 oz feta cheese
3 cups fresh spinach
1/3 cup sun-dried tomatoes
1 tsp minced lemon peel
1 tsp dried basil, oregano or mint
1/2 tsp garlic powder
1 Fresh ground black pepper, to taste
15 oz diced tomatoes, undrained
1/2 cup olives

Recipe Directions for Stuffed Chicken Breasts

  1. Pound chicken breasts to 1/4 inch thick.

  2. Combine feta, spinach (chopped), sun-dried tomatoes, lemon peel, basil, garlic powder and pepper in medium bowl.

  3. Lay pounded chicken, smooth-side down, on work surface.

  4. Distribute spinach mixture evenly among chicken breasts and roll from wide side tightly.

  5. Place rolled chicken, seam side down, in slow-cooker.

  6. Top with diced tomatoes (with juice) and olives.

  7. Cover; cook on low 5.5 to 6 hours, or on high 4 hours.

  8. Serve atop polenta.
