Low sodium, low glycemic stuffed chicken breasts

Recipe Ingredients for Stuffed Chicken Breasts

5 unit+yield+from+1+lb+ready-to-cook+chicken chicken breasts
1/4 cup chopped onion
15 sliced, white mushrooms
3 cups chopped, fresh spinach
1/4 cup shredded mozzarella
1 T olive oil

Recipe Directions for Stuffed Chicken Breasts

  1. Flay each raw chicken breast, place between plastic wrap and pound flat, move to foil lined baking sheet. Add oil to sauce pan, sauté spinach, mushrooms, garlic and onion, remove from heat and add herbs and mozzarella. Spread sauté mix into chicken breasts, close and sprinkle with herbs if desired.

  2. Bake chicken breasts at 350 for 45 minutes.
