A really nice way to serve up chicken; very filling

Recipe Ingredients for Stuffed Chicken Breast

3 oz Chicken Breast
15 grams Prosciutto, Approx 1 Slice
1/4 cup Swiss Chard
3 tsps Flour
1/4 tbsps Olive Oil
1/4 cup Chicken Broth
1/4 tbsps Cream
1/2 slice Provolone
1 tsp Butter

Recipe Directions for Stuffed Chicken Breast

  1. Preheat oven to 350 F

  2. To form pocket, cut the chicken breast horizontally almost to opposite edge. Fold back top half of chicken breast; sprinkle chicken lightly with salt and pepper.

  3. Place prosciutto, provolone and spinach on the chicken breast and fold top half of breast over filling.

  4. Spread 3/4's of the flour on plate. Holding chickent breast closed, coat with flour; shake off excess. Lightly sprinkle chicken with salt and pepper.

  5. Heat oil and butter in skillet over medium heat. Place chicken in skillet; cook about minutes each side, or until browned.

  6. Transfer chicken to shallow baking dish. Bake in oven 10 minutes, or until chicken is no longer pink in center and juices run clear.

  7. Whisk chicken broth and cream into remaining 1/4 of flour in a small bowl. Pour the mixture into same skillet; heat over medium heat, stirring constantly until sauce thickens (about 3 minutes).

  8. Spoon sauce onto serving plates; top with chicken breast.
