Recipe Ingredients for Stuffed chicken breast

4 oz chicken breast
1 tbsp Light Cream Cheese, herb garlic
4 Tomatoes, Sun-dried, Packed In Oil, Drained
2 mushrooms,fresh sliced
1 pinch of salt
1 pinch of pepper

Recipe Directions for Stuffed chicken breast

  1. butterfly breasts

  2. stuff with cheese, tomotoes,mushrooms

  3. season with salt & pepper

  4. use toothpicks to hold together

  5. brown both sides in nonstick skillet sprayed with a small amount of cooking spray

  6. transfer to baking pan cover and cook at 350 for approx. 30 min or until juices run clear and filling is hot.

  7. calories may differ depending on brand of cheese/sundried tomatoes used.

  8. Serve with green salad and a vegetable for an under 500 cal dinner.
