Recipe Ingredients for Stuffed Cabbage Soup

2 serving Extra Virgin Olive Oil
3 cup Rice, Brown, Long-grain, Cooked
32 fl oz Organic Low Sodium Chicken Broth
20 oz Ground Breast of Turkey
1.5 tsp Spices Ground Coriander
2 tsp Paprika
0.5 tsp Sea Salt
1/4 tsp Spices Ground Black Pepper
1 tsp, crumbled Bay Leaf
1 cup, chopped Onions
2 clove Garlic
1 cup, chopped Carrots
3.5 cup Diced Tomatoes
8 oz Tomato Sauce No Salt Added

Recipe Directions for Stuffed Cabbage Soup

  1. Toss 1C rice in 1Tbs oil, add water and cook until tender. Set aside. Can also cook in chicken broth.

  2. Heat deep pot over medium high heat. Add remaining 1 Tbs oil, when hot, add meat and brown for 2-3 minutes. Season meat with spices, salt and pepper. Add bay leaf, onions, garlic and carrots. Cook veggies until they begin to soften. Add cabbage and wilt it down. Add tomatoes, sauce, and remaining stock, cover and raise heat to high. Bring soup to a simmer and cook for 20 minutes or so. Serve over rice, sprinkle with parsley.
