Stuffed cabbage in soup form. Makes a lot, not sure about the # servings. About 1 hr prep. Use coleslaw mix instead of the sliced cabbage.

Recipe Ingredients for Stuffed Cabbage Soup

1 tbsp canola oil
1 lb lean ground beef
1 lb sliced cabbage
1 large onion
28 oz crushed tomatoes in puree
30 oz low sodium beef broth
1 1/2 cups water
1/4 cup brown sugar
1 tbsp lemon juice
1 tsp salt
1 cup brown rice

Recipe Directions for Stuffed Cabbage Soup

  1. Brown meat.

  2. Add cabbage and onion and cook down about 5 mins.

  3. Add the rest and simmer 45 minutes.
