Butternut squash stuffed with quinoa and gorgonzola.

Recipe Ingredients for Stuffed Butternut Squash

1/2 cup Quinoa
3 cup, cubes Squash, Winter, Butternut
4 tbsp chopped Shallots
8 tbsp Gorgonzola Cheese Crumbled Natural
1 tbsp Olive Oil, Extra Virgin

Recipe Directions for Stuffed Butternut Squash

Split squash in half and bake at 400 in a covered dish with half cup water..cut side down. Saute shallots in oil. Add quinoa and 1 cup water. Bring to boil then simmer 15 min. Mix together with scooped out cooked squash and cheese. Place mixture back in squash shell. Bake 10 more minutes.
