Variation on traditional Stuffed bell peppers

Recipe Ingredients for Stuffed Bell Peppers w/Turkey

8 green bell peppers
1 pound lean ground turkey
1 small onion, chopped
2/3 cup mushrooms, chopped
1 salt and pepper to taste
8 ounce can tomatoes, chopped
1 teaspoon liquid smoke
2 teaspoon garlic
1 cup Brown rice, raw (1 cup cooked)
4 oz shredded fat free Cheddar cheese (1 cup)
16 oz tomato sauce

Recipe Directions for Stuffed Bell Peppers w/Turkey

  1. Preheat the oven to 350 degrees F. (175 degrees C).Cut the tops off the peppers, and remove the seeds rise set aside.

  2. In a large skillet, sauté ground turkey and onions for 5 minutes, or until turkey is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes,mushrooms, cooked rice, and Worcestershire sauce. cook until mushrooms are slightly tender. Remove from heat, and stir in 1/4 the cheese.

  3. Stuff each pepper with the turkey and rice mixture, and place peppers open side up in a baking dish, pour tomatoe sauce over open peppers cover with remaining cheese.

  4. Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.
