One of my mom's old standby meals. Quick to prepare and cooks perfectly in the crock pot. Wash bell peppers and chop off the tops, removing seeds. Use some of the tops as the chopped bell pepper if desired.

4 medium green bell peppers, washed
1/2 lb extra lean ground beef
1 cup brown rice
1/2 cup onions, chopped
1/4 cup green bell pepper, chopped
2 stalks celery, chopped
6 oz tomato sauce
10 oz tomato soup
1/2 cup shredded cheddar cheese

Recipe Directions for Stuffed Bell Peppers (Slo-Cooked

  1. Mix the soup and sauce in a small bowl, set aside.

  2. In a skillet over medium high heat brown meat, breaking up large chunks with spoon.

  3. Add onion, peppers and celery. Cook and stir about 2 minutes.

  4. Add 2/3 of soup/sauce mixture and rice, stir. Cook another minute and then remove from heat.

  5. In a crockpot, arrange hallowed out peppers. Fill each to overflowing with meat mixture. Pour any extra in around the peppers and top with remaining soup/sauce mixture. Top each pepper with some cheese.

  6. Cover and cook on high 2 hours or low 4 hours or until rice is tender.
