Bell peppers stuffed with quinoa and turkey

Recipe Ingredients for Stuffed Bell Peppers

1/2 pound ground turkey, cooked and drained
12 small bell peppers
1/2 medium onion, chopped
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup red bell pepper, chopped
2 cloves garlic
1 cup quinoa
1 salt and pepper to taste
4 ounces fat free cheese

Recipe Directions for Stuffed Bell Peppers

Preheat to 375. Carefully cut the tops off the bell peppers, discard seeds but save the bell pepper right around the stem. Boil or steam bell peppers until soft but not limp. Brown turkey in a medium skillet, remove to paper towels to drain. Chop veggies including the reserved bell pepper. Saute until soft. Add meat to veggies, stir in Rotel and warm through. Cook quinoa according to package directions. Add to skillet with meat and veggies and combine. Scoop into bell peppers and top with cheese. Bake 20-30 minutes.
