Bell Pepper stuffed with brown rice and beans. Optionally topped off with cheese and/or sour cream. *Not included in calorie count.

Recipe Ingredients for Stuffed Bell Peppers

1 cup Rice, Brown, Medium-grain, Cooked
1/2 cup Corn, Sweet, Yellow
1 1tsp Olive Oil
0.25 onion Yellow Onion
1.25 cup Beans, Kidney, Red, Mature Seeds
2 medium raw Bell Pepper Green

Recipe Directions for Stuffed Bell Peppers

  1. make brown rice

  2. dice veggies

  3. cut bell peppers in half

  4. preheat oven 325

  5. heat oil in pan

  6. add vegetables

  7. add brown rice and seasonings (cumin, chili powder, etc. s&p)

  8. when done, add mixture to Pepps and pop in oven

  9. cook about ten min (?)

  10. top with cheese/sour cream/hot sauce/cilantro
