Recipe Ingredients for Stuffed bell peppers

6 large sweet red peppers
1 pound cooked pork tenderloin
1/2 cup chopped green onion
1 cups brown rice, raw
2 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 teaspoon cayenne pepper
28 oz. canned crushed tomatoes
1/2 cup chicken broth
2 tablespoons balsamic vinegar
4 cloves garlic, minced
2 tablespoons cilantro
1/4 cup grated Parmesan
5 oz. Mix Spring A Blend of Seasonal Greens
4 tablespoons grated Parmesan
3 tablespoons white balsamic vinegar
1 tablespoon olive oil
4 cloves garlic

Recipe Directions for Stuffed bell peppers

  1. Simmer rice in 2 1/2 cups water for 50 minutes. Cut tops off peppers and remove all membrane and seeds. Stir together the pork, rice, parsley, salt, cayenne and black pepper. In a small saucepan, bring tomato sauce and broth to a boil. Stir in the vinegar, cilantro, garlic and 4 tablespoons Parmesan cheese. Stir about 1 cup sauce into rice mixture. Spoon the rice mixture into peppers. Place in a greased baking dish. Cover with foil and bake at 350 degrees F for 30 minutes. Sprinkle with remaining Parmesan cheese. Bake, uncovered, for 5-10 minutes or until peppers are tender. Serve with remaining sauce.

  2. In a cup, whisk together the vinegar, olive oil, and garlic to make a dressing. In a large bowl, combine the spring mix, cheese, and dressing. Serve with pasta dishes, stuffed bell peppers, or seafood.
