Delicious and nutritious stuffed bell peppers with meat, onion, rice, and tomato sauce.

Recipe Ingredients for Stuffed Bell Peppers

4 green bell peppers
1 pound lean ground beef
1/2 cup chopped onion
15 oz (1 can) tomato sauce, divided
2 cups cooked brown rice
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 cup mozzarella cheese, shredded

Recipe Directions for Stuffed Bell Peppers

  1. Cut tops off peppers and remove seeds.

  2. In a medium skillet, cook meat and onion over medium heat until meat is no longer pink, drain. Stir in one and a quarter cup tomato sauce, rice, garlic powder and pepper. Spoon into peppers.

  3. Place peppers in an ungreased shallow 2-qt. baking dish. Drizzle with remaining tomato sauce. Cover with foil and bake at 350 degrees F for 45 minutes or until peppers are tender. Five minutes before they are done, sprinkle with mozzarella cheese to allow for it to melt.
