Sweet bell peppers stuffed with rice and ground beef

Recipe Ingredients for Stuffed Bell Peppers

5 sweet bell peppers
1 pound ground beef
3 cups cooked white rice
1/2 cup chopped onion
1 can corn
1 egg
1 1/2 cups diced tomatoes
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper

Recipe Directions for Stuffed Bell Peppers

  1. Clean bell peppers and remove seeds

  2. Brown ground beef in skillet. Add onion to ground beef and cook until clear and tender. Add beef to cooked rice.

  3. Drain corn and add to rice mixture. Stir in egg and add spices.

  4. Spoon filling into peppers. Place in slow cooker and pour tomatoes over top. Cook on medium setting until peppers tender and filling heated through.
