Stuffed bell peppers with rice/sausage mixture, topped with melted mozzarella.

Recipe Ingredients for Stuffed bell peppers

4 3/10 oz Rice a Roni Long Grain and Wild Rice
1 lb chicken sausage
1/2 cup mozzarella, shredded
1/2 cup sundried tomatoes, chopped
2 tbsp chives, chopped
1 tsp olive oil
3 red bell peppers

Recipe Directions for Stuffed bell peppers

  1. Preheat the oven to 375.

  2. Half the bell peppers and lightly salt. Place in oven to soften while the "stuffing" is prepared.

  3. Cook the Rice-a-Roni per the directions on the package.

  4. Brown the chicken sausage. (Any kind of sausage will do. I used an italian-seasoned ground chicken sausage.)

  5. Chop the onions.

  6. Mix rice, sausage, and onions in a bowl.

  7. Remove peppers from oven and stuff each pepper with a good helping of the rice mixture.

  8. Top with mozzarella cheese.

  9. Return to oven for 10-15 minutes or until cheese melts and peppers are tender.
