A southern spin on a typically Italian dish!

Recipe Ingredients for Stuffed Bell Peppers

4 green bell peppers
1 lb beef, ground, 93%
1 cup frozen corn
3/4 cup brown rice (uncooked)
2 cup water
1 cup salsa
1 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
1/2 tsp red pepper flakes
1 tsp pepper
4 tbsp shredded cheddar

Recipe Directions for Stuffed Bell Peppers

  1. Preheat the oven to 350.

  2. Wash the bells, cut off the tops & clean out the seeds. I let mine sit in the oven while it preheats so they are softer or you can parboil them.

  3. Brown the ground beef in a large skillet, drain. Add the rice, water & spices, cover & let simmer 30-40 minutes until most of the water is absorbed & the rice is soft. You may need to add more water so watch it closely toward the end of the simmer time. Add the frozen corn & salsa. Let simmer an additional 10 min.

  4. Remove the peppers from the oven, drain any fluid that may have pooled in the bottoms. Sprinkle some cheese at the bottom, spoon some of the rice mixture, another layer of cheese, more mix then top with cheese. Repeat with all 4 bells. Place into a baking dish & bake 15-20 to let the flavors blend.

  5. For a low carb version, omit the brown rice. You can also add black beans or jalapenos. These are very versatile!
