Stuffed Bell Peppers with meat and vegetables

Recipe Ingredients for Stuffed Bell Peppers

14 bell peppers
2 cups of brown rice
3 tablespoons of butter
2 tablespoons of olive oil
8 ounces of low fat cheddar cheese
1 salt
1 pepper
15 ounces of crushed tomatoes
30 ounces of tomato soup
2 cups of chopped shallots
8 garlic cloves
1 cup of bread crumbs
1 pound of ground turkey
1 pound of italian sausage
16 ounces of crimini mushrooms
16 ounces of spinach

Recipe Directions for Stuffed Bell Peppers

  1. Heat oven to 375 degrees.

  2. Heat butter and oil in a skillet at medium heat. Chop shallots, mushrooms and garlic and add to skillet. Cook for 10 minutes until slightly brown. Cut tops of bell peppers and add spinach in the skillet and sautee with onions, shallot, mushroom and garlic for another 10 minutes. Remove and set aside vegetables. Shred cheese and add to vegetables. Add meat to a large bowl and add all vegetables after they have cooled down. Add 1 large egg if you wish or leave out. Add salt and pepper and 4 tablespoons of dried basil to mixture and then add breadcrumbs. In this large bowl, make sure to add tomato soup and crushed tomatoes and then mix everything very well. Once all ingredients are mixed, spray PAM or some type of low fat cooking spray on the bottom of a large casserole dish. Spray the hollowed out peppers with the cooking spray and place them in the pan. Begin to fill each pepper with the mixture. Fill to the top and sprinkle the rest of the shredded cheese on the peppers. Spray the tops with PAM or some other cooking spray. Cook the peppers for 75 minutes.
