The meat/rice mixture is also good in stuffed beefsteak tomatoes, or you can eat it without stuffing a vegetable.

Recipe Ingredients for Stuffed Bell Peppers

2 cups cooked rice
6 bell peppers
1 1/2 lb ground turkey
1 tsp onion powder
1 tsp chili powder
2 tbsp beef stock
6 oz cream of mushroom soup
1 egg, beaten
1 salt, pepper, garlic to taste
1 1/2 c bread crumbs

Recipe Directions for Stuffed Bell Peppers

  1. Start rice first.

  2. Preheat oven to 350F.

  3. Wash & core peppers.

  4. Brown meat, add onion & beef stock.

  5. Add garlic, pepper & chili powder.

  6. Add rice to beef, then mushroom soup, egg & bread crumbs.

  7. Stuff peppers, top with breadcrumbs & butter.

  8. Bake in 1/8" water for 45 minutes.

  9. Remaining mix can be baked in dish or microwaved for 5 minutes.
