Recipe Ingredients for Stuffed Bell Peppers

3 large green bell peppers, halved & seeded
1 lb lean ground turkey
3 tbsp garlic
12 oz frozen broccoli
6 spears asparagus, cut into bite-sized chunks
2 cups brown rice, cooked
3 oz reduced-fat cheddar cheese, shredded
1/2 cup egg substitute

Recipe Directions for Stuffed Bell Peppers

  1. Preheat oven to 375.

  2. In a large pot, boil the pepper halves for 5 minutes until slightly softened. Drain and set aside.

  3. Boil the asparagus for 3-5 minutes, until soft, but still crisp. Drain and set aside.

  4. Meanwhile, in a large skillet, cook the turkey and garlic until the turkey is no longer pink. Add the broccoli and boiled asparagus. Cook the mixture together until the broccoli is hot and softened. You may need to add a little water to the mixture, cover and let steam for 5-7 minutes. Remove from heat.

  5. Stir in the rice, cheese, & egg substitute.

  6. Spoon the mixture into the pepper halves, mounding each one. The filling should be just right for 6 pepper halves. Place the peppers in a baking dish. Add enough water to come about 1/4" up the sides, and bake 15-20 minutes, or until the peppers & filling are hot and a crust forms on the top.

  7. Serve immediately.
