This is a great recipe but I only had 3 peppers so I made it in 3 portions - next time I will be putting it in as 4 portions which will even out the calories.

Recipe Ingredients for Stuffed Bell Peppers

3 large bell peppers
1 cup Organics Long Grain Brown Rice
1 lb Chicken, ground, crumbles, cooked, pan-browned
2 tsp olive oil
1/2 tsp ground sage
1 tsp dried thyme
1/2 tsp hot pepper flakes
1 salt and pepper to taste

Recipe Directions for Stuffed Bell Peppers

  1. Preheat your oven to 300 degrees

  2. Brown the meat in a pan with onions or any other vegetable(s) you wish

  3. Add the (cooked) rice

  4. Bring everything to temperature

  5. Cut the tops off of the peppers and rinse out any seeds etc from inside

  6. Stuff the peppers with the meat/rice mixture and put into a pan or a dutch oven, cover, and bake until peppers are the desired consistency.

  7. ** Note: I like crunchier peppers so I cook mine for about 70 minutes in my dutch oven
