this is my husbands favorite dish. Remember that those calories are for the entire 4 serving not each individual bell pepper. I just calculate according to the entire amount I made.It's supper yummy and very filling.

Recipe Ingredients for stuffed bell peppers

1 medium Green Bell Pepper
1 cup Rice, Brown, Medium-grain, Cooked
250 2/5 grams Black Beans
0.5 medium Onions
0.5 cup Corn, Sweet, Yellow
1 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for stuffed bell peppers

fpreheat the oven to 425 f. Sautee the onion until it's transparent then throw in the cooked brown, black beans, and corn and warm it all together. Cut the tops off the bell pepper and deseed it. start with a lil cheese then add the rice,bean, corn, and onion, add a bit more cheese and layer and bit more of the combination. Finish it off with a pinch more of cheese. Set them upright on a cooky sheet and replace the top of the pepper. Place in the oven for 45 minutes. It might turn the skin to a black and that is normal. Allow to cool and enjoy.
