Use large bell peppers and allow 1/2 per serving. A half-pepper, stuffed with the rice mix will be 491 calories.

Recipe Ingredients for Stuffed Bell Peppers (1/2 per serving)

8 oz. lean ground beef (browned)
1 large onion
2 1/2 cups brown rice (cooked)
3 large bell peppers
2 cups diced tomatoes
2 tblsp chili powder

Recipe Directions for Stuffed Bell Peppers (1/2 per serving)

  1. Brown the ground beef and onion. Add cooked rice, chili powder and diced tomatoes to the meat/onion mixture. Mix and turn heat to low.

  2. Clean bell peppers and remove top and seeds. Place in glass baking pan and microwave for about 4-5 minutes (just until color starts to change). Remove from microwave and allow to cool.

  3. Stuff the cooled peppers with the rice mix. Top with cheese, if desired and bake at 325 for 20 minutes.
