Recipe Ingredients for Stuffed Bell Pepper Stew

1 bell pepper, green
1 bell pepper, red
1 onion, diced
800 grams tomatoes, diced
400 ml tomato sauce, low sodium
1 pinch salt
1 pinch pepper
5 grams rosemary
500 ml chicken stock
1 tsp walnut oil
125 grams quorn, mince
60 grams corn, sweet, canned
2 cloves garlic

Recipe Directions for Stuffed Bell Pepper Stew

  1. Brown the quorn in the walnut oil over high heat.

  2. Reduce heat medium-low and add onion, garlic and bell peppers.

  3. Cook for about 10 minutes until onion is soft and translucent.

  4. Add the diced tomatoes and simmer for another ten minutes.

  5. Add the tomato sauce and the warm stock.

  6. Cook over low heat for another half and hour.

  7. Serve with brown rice.

  8. Enjoy.
