I didn't include the peppers in the ingredients list because the color of your pepper will change your nutrition values. Add your pepper to your log in addition to this.

Recipe Ingredients for Stuffed Bell Pepper Filling

8 clove Garlic
16 oz Ground Turkey, 93% Lean
1 tbsp, ground Basil, Dried
1 cup dry Brown Rice
1 cup dry Brown Rice
3 serving Cabot's 75% Reduced Fat Sharp Cheddar

Recipe Directions for Stuffed Bell Pepper Filling

  1. Mince Garlic.

  2. Cook Ground Turkey and drain onto a plate.

  3. Add drained liquid back to skillet along with the garlic and saute.

  4. Add one cup of water to the skillet. Bring to a boil.

  5. Add rice and bring to a boil again.

  6. Reduce heat to low, cover, and let sit for five minutes.

  7. Uncover and continue to cook until water has boiled off.

  8. Add turkey and basil; mix.

  9. Core your six bell peppers. Fill with meat/rice mixture. Top with shredded cheese.

  10. Cook in a 350F oven for 10-15 minutes.

  11. Serve!
