Stuffed Shells meet Banana Peppers!

Recipe Ingredients for Stuffed Banana Peppers

15 Banana Peppers
1/2 cup Bread Crumbs
12 oz Chicken, ground, crumbles, cooked, pan-browned
2 tbsp Basil, Fresh
2 tsp, leaves Thyme, Dried
1 tsp Onion Onion Seasoning Blend
1 tsp Garlic Garlic Seasoning Blend
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe
2 cups Italian Sausage with Peppers and Onions
4 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Stuffed Banana Peppers

  1. Chop 3 banana peppers, tomato and mix with browned chicken, panko crumbs, and spices.

  2. Remaining 15 peppers, chop off the ends only, and de-seed the peppers.

  3. Line the whole peppers in a greased baking dish, spray the top of the peppers with cooking spray, then stuff with filling.

  4. Grate a small amount of mozzarella for top of peppers.

  5. Pour tomato sauce on top of peppers, top with remaining mozzarella cheese.

  6. Bake at 400 degrees F for 15-20 minutes, until done. Enjoy!
