Recipe Ingredients for Stuffed Baked Tomatoes

4 tomatoes, halved lengthwise
1/2 c shredded part-skim mozzarella cheese
1/4 c basil, roughly chopped
2 T freshly grated Parmesan cheese
1 clove garlic

Recipe Directions for Stuffed Baked Tomatoes

  1. Heat oven to 400F.

  2. Scoop out the inside of each tomato half with a melon baller and roughly chop the scooped pulp. Combine tomato pulp, mozzarella, basil, Parmesan, garlic and salt and pepper.

  3. Place tomatoes, cut side up, on a baking sheet. Spoon in tomato mixture and bake until cheese is melted and lightly brown, about 10 mins.
