Delicious and a great way to use softening tomatoes

Recipe Ingredients for Stuffed Baked Tomatoes

2 large whole (3" dia) Tomatoes, Red, Ripe
16 oz Italian Parsley
1 tablespoon Oregano
2 cloves, raw Garlic
1 serving Extra Virgin Olive Oil
1 tbsp Capers
1/4 cup Panko

Recipe Directions for Stuffed Baked Tomatoes

  1. Cut the tomatoes in half lengthwise and scoop out the seeds and some flesh.

  2. Copy the oregano, parsley & garlic, and combine with the capers and salt and pepper to taste.

  3. Stuff the herb mixture into the tomatoes.

  4. Pour 1 Tablespoon of Vermouth into the base of abaking dish. Place the tomatoes upright in the dish.

  5. Top with panko and drizzle with olive oil.

  6. Bake at 500'F for 15-20 minutes until the panko is golden and the tomatoes cooked through.
