My take on a recipe from clean eating mag

Recipe Ingredients for Stuffed Baked Potatoes

2 large russet potatoes
7 oz boneless skinless chicken breasts
1/2 tsp sea salt
1/2 tsp ground black pepper
1 tsp olive oil
1 cup baby spinach
1/4 cup mushrooms, chopped and sauteed
1/2 cup shredded cheese mexican blend
3 tbsp smart balance
2 garlic cloves, minced
1 oz 2% milk
1 green onion

Recipe Directions for Stuffed Baked Potatoes

  1. Oven to 400F

  2. Poke potatoes with fork all over, cut a small slit in center (to make slicing in half easier). Bake for 45 mins or until tender

  3. Season chicken, dice into cubes, sautee in pan until fully cooked, remove

  4. Add garlic, mushrooms and spinach to same skillet, sautee until spinach wilted. Add to reserved chicken.

  5. Cut potatoes, scoop out insides and mash w/ butter and splash of milk

  6. Add chicken mixutre to mash, add cheese, diced green onion and salt/pepper to taste.

  7. Scoop into potato shells and bake at 400F for 10-15 mins.
