Tasty baked potato halves, a bit fancier than plain baked potatos, for a change.

Recipe Ingredients for Stuffed Baked Potato Halves

2 potatos, russet, baked in skins
1/4 cup milk, 2%
1 tbsp butter
1/4 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
1/4 cup cheese, shredded (mixed white cheeses)
1/4 tsp chili powder
1 scallion, diced and some bacon bits to top

Recipe Directions for Stuffed Baked Potato Halves

  1. Wash, prick and bake the potatos in their skins until a knife passes through them easily, about 1 hour at 375 C.

  2. Remove from oven and slice each potato in half.

  3. Remove the cooked insides and keep the skins intact.

  4. Mix the insides with butter, milk, salt, pepper and nutmeg, and refill the skins.

  5. Place them cut side up, in a baking dish.

  6. Top with shredded cheese, chili powder, bacon bits and sliced scallion bits.

  7. Place under a preheated grill for a few minutes until golden brown, and ready to serve.
