Recipe Ingredients for Stuffed Baked Marrow

10 1/4 oz Marrow
2 lb Marrow
1 tablespoon olive oil
1 large onion, chopped
2 garlic cloves, chopped
1 tablespoon dried mixed herbs
200 grams mushroom
100 grams Mince - Chilled
200 grams Frozen Mixed Pepper Strips
800 grams canned chopped tomatoes
3 oz white bread crumbs
2 1/2 oz parmesan
1 tablespoon dried mixed herbs
1 tablespoon tomato puree

Recipe Directions for Stuffed Baked Marrow

  1. cut the marrow into 4 cm high discs and scoop out their middles place in a deep lasagne dish.

  2. Heat the oil in a large pan and fry the onion till golden and then fry the garlic till fragrant. Then add the vegetables and saute them off with lid on for 10 minutes. Then add the mince fry for a secound with the veggies, then add the tomatoes, tomato puree and 1 tab of herbs, simmer for 20 minutes with lid on, then season well and simmer for a futher 10 minutes with lid off.

  3. Then fill the marrow with the mixture and the remaining mix place around the marrow.

  4. Cook in a preheated oven gas mark 6 with foil covering it for 30 minutes.

  5. While thats doing mix the parmesan with the herbs and breadcrumbs, after 30 minutes check marrow has softened, if it has take foil off and sprinlke with the herb cheese and breadcrumb topping and return it to the oven and cook for a further 10 minutes more or untill crumbs are golden and crisp and marrow is tender.

  6. Serve with buttered rice or pasta.
