Stuffed Aubergine rolls filled with ricotta and mozarrella cheese in a tomato sauce

Recipe Ingredients for Stuffed Aubergine Rolls

12 oz Aubergine
1 medium Onions
124 grams Ricotta, Whole Milk Cheese
125 grams Mozzarella, Part Skim Milk Cheese
3 1tsp Olive Oil
250 grams Tomato Cherry

Recipe Directions for Stuffed Aubergine Rolls

Slice aubergines lengthways into 5mm strips. Brush with oil and part fry til browning, put aside on kitchen roll. Make filling by cubing mozzarella mix into chopped onions, ricotta and a pinch of nutmeg. make up tomatoes in remainder of oil and cook for 8 minutes. Put half tomatoes in oven proof dish, fill and roll aubergines and place on toms and cover with remainder of toms. Oven for 20 minutes at 180.
