Great for breakfast or a side dish with dinner. For a slightly lighter, tarter option, omit sausage from stuffing and add dried cranberries.

Recipe Ingredients for Stuffed apples

2 apples
1 slice whole wheat bread, cubed
1 oz onions, chopped
1/8 cup yams, chopped
1 tbsp sage, fresh minced
2 oz sausage, patty type
2 oz white wine or muscat
1/8 tsp salt, sea salt

Recipe Directions for Stuffed apples

  1. Split the apples in half, and cut out the core with a paring knife.

  2. In one pan, place the apples core side up, and pour the wine over them, adding a litttle water if the fluid level in the pan is too low. There should be about half an inch of liquid in the pan.

  3. Cover and simmer/steam over medium, checking the fluid level occasionally and adding more water if needed.

  4. While the apples are simmering, cook the sausage in a medium skillet with a little cooking spray, breaking up any large chunks.

  5. As the sausage starts to cook, add the yams and more cooking spray, stirring frequently.

  6. Once the sausage is fully cooked and the yams are softening, add the onions and sage, continuing to stir.

  7. When the yams are fully cooked, add the bread cubes and salt, and coat thoroughly in cooking spray.

  8. Toss bread cubes with other ingredients, and cook just long enough to lightly toast.

  9. The apples should be softened (but slightly crisp) at this point, and the skins beginning to separate.

  10. Place apples core side up on a plate and mound with stuffing.
