Mild to hot peppers stuffed with cheese, chicken and wrapped in bacon.

Recipe Ingredients for Stuffed Anaheim Peppers

5 ounces cream cheese
1/4 cup cheddar cheese
1/4 lb bacon
1 cup chicken

Recipe Directions for Stuffed Anaheim Peppers

  1. 8 anaheim peppers are not added to the ingredient list as they were not coming up in the list. Pepper, hot chili, green per pepper are 18 calories. (total for 8: 144)

  2. Cut off tip of pepper and score down one side. Empty seeds and place in a strainer. Place strainer in a bowl and add about 2-3 tbsp of water to the bottom. Cover with a lid and microwave for about 4 minutes.

  3. I used precooked chicken breasts chunks.

  4. Mix cream cheese, cheddar cheese and chicken in a small bowl.

  5. Microwave bacon until almost done, not quite crispy.

  6. Stuff equal amounts of cream cheese mixture into peppers and wrap with a piece of bacon. I used less bacon to make it less fattening.

  7. Place on a foiled cookie sheet and bake at 350 degrees for about 20 minutes.

  8. Let cool for a few minutes.

  9. Total calorie count comes to: 394 per serving
