Recipe Ingredients for stuffed acorn squash

1 ea. Squash Acorn
6 oz Blue Menu extra lean ground chicken
0.3 large Onions
0.25 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.7 cup Rice, Brown, Long-grain, Cooked
0.125 cup Splendido Parmigiano Reggiano
0.125 cup Almond Meal/Flour
2 tbsp Egg Whites

Recipe Directions for stuffed acorn squash

mix in all the stuffing, add herbs, spices of choice, stuff meat/rice mixture to prepared acorn squash. Bake covered for about 40 minutes, then uncovered until golden brown
