Squash stuffed with sausage and rice

Recipe Ingredients for Stuffed Acorn Squash

2 acorn squash
3/4 lb turkey sausage
6 oz rice
1/2 apple
1 tbsp margarine
2 tsp coriander
4 tbsp lowfat cheese

Recipe Directions for Stuffed Acorn Squash

  1. Prepare rice according to instructions.

  2. Brown sausage in frying pan, and set aside.

  3. Cut squash in half, remove seeds, and microwave, cut side down, for 10 minutes.

  4. Mix apple, sausage, coriander and rice mixture in bowl.

  5. Stuff each squash half with stuffing, cover with plastic wrap, and microwave for 3 minutes.

  6. Add cheese to top, and microwave for 1 minute, or until melted.
