Nutty, Spicy and Yummy Acorn Squash

Recipe Ingredients for Stuffed Acorn Squash

2 acorn squash
1 small turnip
1 carrot
1 gala apple
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tbsp olive oil

Recipe Directions for Stuffed Acorn Squash

  1. Preheat oven to 250

  2. Cut squashes in half, remove seeds and strings, and place cut side down in baking dish with water coming 1/2 inch up sides, cover with foil

  3. Bake for 25 minutes, flip over, bake for 25 more

  4. While waiting, boil carrot and turnip in water until soft and cut apple into chunks

  5. Scoop out squash innards and place in blender with carrot, turnip, spices and oil. Puree.

  6. Fold in apples and spoon back into squash shells.

  7. Place in microwave and heat on high for 1-2 minutes until filling is hot through.
