Recipe Ingredients for Stuffed Acorn Squash

16 oz Squash, Winter, Acorn
6 oz Ground Turkey Breast, 99% Fat-free
0.25 cup, diced Celery
0.25 cup, chopped Onions
0.25 tsp Curry Powder
0.1 tsp Cinnamon, Ground
4 oz Applesauce Unsweetened
1 slices (45g) Sandwich Bread

Recipe Directions for Stuffed Acorn Squash

  1. Spray a 8x8x2 baking dish with nonstick spray. Halve squash, discard seeds. Place squash, cut side down, in baking dish. Bake, uncovered, in 350 oven 50 min.

  2. Meanwhile, for stuffing, in a skillet cook lean turkey breast, celery and onion, till meat is no longer pink and vegetables are tender. Drain any liquid. Stir in curry powder and cinnamon; cook 1 minute more. Stir in applesauce and bread cubes.

  3. Turn squash cut side up in dish. Divide stuffing between halves. Bake uncovered, 20 minutes more.
