Acorn squash stuffed with veggies and topped with cheddar cheese.

Recipe Ingredients for Stuffed Acorn Squash

1 acorn squash
4 mushrooms
1 onion
1/2 cup reduced fat cheddar cheese

Recipe Directions for Stuffed Acorn Squash

  1. Cut acorn squash in half, and back in oven hard side up for 30 minutes at 350F.

  2. Slice mushrooms and onions.

  3. Cook onions in pan until soft, then add mushrooms to cook.

  4. Stuff baked acorn squash halves with mushrooms and onions.

  5. Cover with 1/4 cup of cheddar cheese each.

  6. Set back in oven until cheese is melted.
