Acorn squash stuffed with rice, tofu, roasted red bell, and onion.

Recipe Ingredients for Stuffed Acorn Squash

1 acorn squash
1 cup brown rice, cooked
1/4 cup firm tofu
1 T olive oil
1 red bell pepper, roasted
1/4 med onion, sauteed

Recipe Directions for Stuffed Acorn Squash

  1. Preheat oven to 350.

  2. Halve and seed the squash.

  3. Roast the pepper on the stove top until skin is black. Place in resealable plastic bag to steam. Remove when cool enough to handle. Remove blackened skin, seeds, and core. Slice into thin strips.

  4. Meanwhile, sautee onions, garlic, italian spices, and tofu together.

  5. Add rice and peppers, mix together.

  6. Stuff into halved squash.

  7. Bake until squash is done.
