Recipe Ingredients for Studded zucchini cornbread

1 1/2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup Rogers All Purpose Flour
1 cup Yellow Corn Meal
1 1/2 teaspoon Baking Powder
1/2 tsp Leavening Agents, Baking Soda
1/2 tsp Salt
1/4 cup, packed Sugars, Brown
8 oz Vanilla Soy Milk light
1 egg egg Cage Free All Natural Large Egg
1 large Egg, White
1/2 cup unsalted butter
1/4 cup Dried Cherries

Recipe Directions for Studded zucchini cornbread

  1. Whisk dry ingredients in one bowl

  2. Whisk wet ingredients in second bowl

  3. Fold together until mixed.

  4. Fold in cherries and zucchini, shredded

  5. Add mixture to cast-iron pan or baking pan (8x8)

  6. Bake at 400 for 25-30 minutes or until toothpick comes out clean
