Recipe Ingredients for Stroganoff (Vegetarian)

16 oz egg noodles, cooked and drained
2 sliced onions
12 oz sliced mushrooms
1 tsp minced garlic
1 tbsp vegetable oil
1/4 cup dry red wine
12 oz broccoli florets
1 cup reduced fat milk
2 tbsp flour
1 1/2 tsp dijon mustard
1 cup sour cream
1/2 tsp dried dill weed

Recipe Directions for Stroganoff (Vegetarian)

  1. Saute onions, mushrooms and garlic in oil in large skillet until softened, about 5 min.

  2. Add wine, broccoli, and protein crumbles; heat to boiling. Reduce heat and simmer until broccoli is tender about 8 min.

  3. Mix milk, flour, and mustard, stir into vegetables. Heat to boiling; boil, stirring constantly until thickened.

  4. Reduce heat to low and stir in sour cream and dill weed and cook 1-2 min. Season with salt and pepper.

  5. Serve over cooked noodles.
