Recipe Ingredients for String Bean and Potato Salad for Gringos

1 lb string bean
1 lb red potatoes
1 clove garlic minced
2 tbls extra virgin olive oil
1 tsp red wine vinegar
1/2 tsp salt
1 freshly ground pepper

Recipe Directions for String Bean and Potato Salad for Gringos

  1. boil two large parts of water

  2. while boiling, halve potatoes and snap ends off of the string beans

  3. when the water is boiling add vegetables (beans will take 6 minutes, potatoes 12-15 minutes) Sting beans should be soft with a little snap.

  4. when beans are finished, remove with a slotted spoon or drain in a colander. and run cold water over to stop the cooking. (placing them in ice cold water will stop them from cooking and brighten the color. drain afterwards)

  5. allow vegetables to cool and then add the seasoning.
