Recipe Ingredients for Street Meat Chicken Plate

1 1/2 cup chicken
1 tsp paprika
1/2 tsp curry
1 tsp fresh ginger, grated
2 tsp cumin
1/4 tsp cinnamon
1/4 tsp nutmeg
6 oz tomato juice
1 medium onion, sliced thin
2 tbl olive oil
1 tbl vinegar
1 tsp tabasco
1 cup basmati rice
2 cups water
1/2 tsp turmeric
1 tsp kosher salt
1/4 cup lettuce
1/4 cup tomato

Recipe Directions for Street Meat Chicken Plate

  1. Marinate chicken with dry spices and olive oil (overnight is best, but can do it 10 minutes ahead).

  2. Sweat onions, and sauté chicken with marinade and ginger.

  3. When chicken starts getting some nice color and before the spices burn, add tomato juice & vinegar

  4. On medium heat, reduce until all the liquid is gone.
