Recipe Ingredients for Strawberry Zucchini Muffins

3/4 cup skim milk
1 tablespoon lemon juice
2 T extra virgin olive oil
2 T applesauce
1/4 c applesauce
1/2 cup maple syrup, light
1 egg
1 zucchini
2 cups flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup fresh strawberries

Recipe Directions for Strawberry Zucchini Muffins

  1. Preheat oven to 350. Grease a muffin tin and set aside.

  2. In a small measuring cup, combine the milk and lemon juice. Let sit for 5-10 minutes to allow the milk to curdle.

  3. In a large bowl, combine the milk mixture, oil, maple syrup, and egg. Stir until well combined. Mix in the zucchini.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cloves. Add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the strawberries.

  5. Fill muffin cups 3/4 full. Bake for 15-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow the muffins to cool in the pan for 5 minutes, then remove them from the pan to cool completely.
