Recipe Ingredients for Strawberry Yogurt Poppyseed Muffins

1 cup flour
3/4 cup whole wheat pastry flour
2 teaspoons lemon peel
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tbs poppy seeds
1 egg
4 ounces lowfat yogurt
4 ounces fat free yogurt
1/3 cup canola oil
1/4 cup powdered sugar
2 teaspoons lemon juice

Recipe Directions for Strawberry Yogurt Poppyseed Muffins

  1. Heat oven to 400. Lightly spray muffin pan.

  2. Combine dry ingredients in a large bowl (through poppy seeds). Combine wet ingredients (egg, yogurt, and oil) in another bowl.

  3. Make a well in the center of the dry ingredients and add wet mixture. Stir just until combined.

  4. Place batter in muffin pan. Bake 20 minutes or so until golden on top. Remove from oven and cool for 5 minutes, then remove from pan.

  5. Combine powdered sugar and lemon juice to make glaze. Drizzle on top of muffins.
