Uses healthy whipped cream this time and I also added strawberry jam.

Recipe Ingredients for Strawberry Sponge Gateau

2 large eggs
125 g (4oz) splenda, granular
125 g (4oz) gold medal all purpose flour
400 g (13oz) strawberries
1/2 cup skim milk
1/2 cup nonfat dry milk powder
1/8 teaspoon cream of tartar
4 teaspoons lemon juice
2 teaspoons sugar
1/2 teaspoon vanilla extract
4 tablespoons strawberry jam

Recipe Directions for Strawberry Sponge Gateau

  1. Cake: Heat the oven to Gas 4, 180C, 350F. Line a 16cm(6in) loose-bottomed cake tin with baking paper. Whisk the eggs with an electric whisk until white and creamy. Continue to whisk while slowly adding the sugar. Sift flour and quickly fold into mixture. Spoon into cake tin and bake in the oven for 35 minutes, until firm to the touch.

  2. Allow the cake to cool in the tin for 5 minutes, then remove and peel away the baking paper. Place on a wire rack until completely cool.

  3. Whipped Cream: Put the skim milk in a small metal bowl, set in the freezer, and let stand just until ice crystals begin to form-about 15 minutes.

  4. Remove from the freezer and add the dry milk powder and cream of tartar. With a hand electric mixer, whip the mixture at high speed until foamy.

  5. Beat in 1 teaspoon of the lemon juice and continue beating until the mixture begins to thicken. Beat in another teaspoon of the lemon juice and, if desired, the sugar, and continue beating until the mixture peaks softly. Add the remaining 2 teaspoons lemon juice and continue whipping to stiff peaks. Fold in the vanilla extract, if desired, and serve immediately as a dessert topping.

  6. Using a large knife, carefully slice the cake into 2 equal-sized rounds. Place the bottom slice of cake on a serving plate, spread with one third of whipped cream and 2 tablespoons of starwberry jam, top with sliced strawberries. Add a little more whipped cream and top with another round of cake. Place last layer on top and and add the last two tablespoons of jam first then the rest of whipped cream. If there's left over whipped cream you can add to the sides--all over the cake.
